Have you ever given much thought to olive oil, such as where it came from, how it should taste or how it should be used? We are finally learning here in Canada what people from the Mediterranean have known for hundreds or even thousands of years. It is much more than just a cooking oil, its a health food and more.

All olive oils are different because they all come from different varieties of olives. If you have ever eaten olives then you know that they all taste different, from giant green ones to little black ones. They all have a distinctive taste, shape and color.

Two of our oils come from a large coop in the south of Spain called Olivar de Segura. It is located in the province of Jaen, Andalucia. In this region the Picual olive is the most prominent.

One of the defining characteristics of Picual Olive Oils compared to other varieties, is its robust flavor. It can carry a hint of bitterness from the high amount of polyphenols. It will also taste and smell very green with hints of grass or green tomato.

This olive oil also has a higher content in oleic acid and a lower amount of polyunsaturated acids which makes it very stable against oxidation and rancidity. This makes the Picual olive oil the best for cooking with at high temperatures, as it maintains its antioxidant properties even after the second use.

” Picual is also very high in oleocanthal, a polyphenol that can cause a mild tickling sensation in the back of your throat when you eat it raw. If you do not feel a mild sensation in your throat when you taste your olive oil, it may have been blended and lost its healthy antioxidant qualities.” 

Here are some suggestions on the oils we carry:

Variety: Picual

Taste: Intense, peppery and robust

How to use:

  • For frying, baking and sauteing
  • Cooking stews and soups.
  • As a preservative of meats and cheeses
  • For salads and breads, pairs well with balsamic vinegar
  • Pairs well with tomato on toast
Oro de Genave Selection, Premium Organic 

Variety: Picual

Taste: Medium robust, green and fruity aroma

How to use:

  • For salads and breads, pairs well with balsamic vinegar
  • Create your own sauces and salad dressings
  • Light cooking, baking and sauteing
  • Finishing meats and dishes with a drizzle on top
  • Pairs well with tomato on toast

It can be argued that the Picual olive oils is one of the healthiest oils on the market. The robust taste does however show up in some types of sauces and dressing more than other olive oils. Plus, many people eating it raw might find the taste too strong. 

So we have also added a great tasting olive oil from Aceities Canoliva, located further south in Baena, Cordoba. They have created a wonderful blend using Hojiblanca and Arbequina.

The Cano family are pioneers in organic farming and have been bottling for many brands in the south of Spain since the 1970’s. They have created a brand call CampoSur meaning: southern lands. Holjiblanca has a medium spiciness to it and is balanced with the buttery taste of the Arbequina. These are very popular table olives with a wonderful taste! The oil is no different.

Taste: A light tasting olive oil

How to use:

  • For frying, baking and sauteing
  • Cooking stews and soups.
  • For salads and breads, pairs well with balsamic vinegar
  • Pairs well with tomato on toast

With these three olive oils you have everything you need for your home cooking and dressings. Olive oil and vinegar pair so well as their antioxidant rich properties can also assist in digestion. Keep an olive oil for finishing and one for cooking. Once you get used to the tastes of pure olive oil, you will not be able to go back to other oils!

Our olive oils carry a bottled on date instead of a best before date. Our olive oils are good for 2 years after opening, however they are best to be consumed within one year. If you drop any on your hands, rub it in! Remember it is full of vitamin E and is a very excellent moisturizer for your skin. You can also apply it to bruises and watch them disappear faster due to its inflammatory properties.

Introducing Olivar de Segura

The people behind these wonderful brands: Oro de Genave, Oro de Genave Seleccion, Saqura 

Olivar de Segura is a cooperative made up of 4,500 associated family farmers. Within this group, they have over 30,000 hectares of mountain olive groves and an average production of 20,000 tons of olive oil pressed in 12 different mills. One mill being specifically for organic production. Their only purpose is to offer the world the juice of the olive fruit of the most beautiful olive groves of their region.

The production area spans through Sierra de Segura Natural Park, Sierras de Cazorla and Segura Las Villas Natural Park, located in the province of Jaen. Due to its ecological importance, this area was designated a Unesco biosphere reserve in 1983. This is the largest protected area in Spain. Sierra de Segura has one of the largest MOUNTAIN OLIVE GROVES in the world.

These olive groves are simply and honestly the economic driver in this region of Spain. Olivar de Segura provides a vital contribution to the rual development joining these farmers together and having a strong market position. They have strong values of keeping a balance between the quality of products and the conservation of the local environment and natural heritage.

This large coop has some of the strictest certifications of quality control in the industry. From the moment the olives arrive at the mill to the time it is bottled and shipped out to customers. There are inspection and controls at every step. Also, through the DOP regulatory council and the organic certification body (CAAE) do a range of analysis to ensure that the oils are all complying with the regulations applicable and to assure the tractability of the product.

The coop has their own laboratory authorized by the Agricultural Ministry of the regional government in Andalusia. Here they carry out the physico-chemical testing and analysis.

Within this area, the picual olives make up most of the groves in this area. These olive grow up the mountains some 900 meters above sea level. They are also surrounded by alpine pine trees. Growing in these high mountain conditions, creates a highly stable olive oil that means more antioxidants and a higher amount of polyphenols that most olives on the market.

The picual olive trees grown up in the mountains comes off as a smoother and fruitier tasting olive oil than the picual growing in lower lands. The higher stability of the olive oil also makes it a great olive oil for cooking with.
